A dish that packs a punch full of flavour. Great for lunch.
Serves 4
Ingredients
1 yellow pepper
1 red pepper
1 courgette
1 red onion
150g baby plum tomatos
2 cloves of smoked garlic
3 sprigs of rosemary
100g of smoked cheese
4 ciabbata pieces
2 tbsp of olive oil
2 tbsp of balsamic vinegar
Salt and pepper to taste
Method
Preheat the oven to 200 degrees. Deseed and quarter the peppers. Remove the outer skin and quarter the red onion. Slice the courgette into small 1cm discs. Scatter the chopped vegetable with the tomatos onto a baking tray. Chop the garlic and rosemary and scatter over the vegetables. Season with salt and pepper and coat with the olive oil. Mix well. Roast for thirty minutes. Cut each ciabatta piece in half and pop in the oven for a further three minutes. Remove from the oven and cover the ciabatta with the roast veg. Top with shavings of smoked cheese and a drizzle of balsamic vinegar.
